I certainly had a lot of fun creating this cheery birthday cake for a sweet little girl who adores Emma Wiggle 💛 Three layers of chocolate fudge cake are filled with rose pink tinted vanilla mascarpone cream and milk chocolate ganache. There are many variations of ANZAC biscuit recipes and I’ve enjoyed baking and tasting each batch. However, I always come back to this one ➡️swipe to the end for details...🧡 Not too sweet, not to dry, a little chewy but with just enough crunch. I roll the dough into walnut sized balls, flatten and then bake for 15 minutes in a preheated oven at 180 degrees conventional setting, (or 160 degrees fan forced). For thicker, more dense ANZAC biscuits only slightly press each ball of dough before baking. Cool on wire racks to crisp up further.
 A handwritten copy of this recipe, in fine, beautiful script, was given to me by my friend and neighbour Beverley Sherry. This 20cm, 3-layered nutmeg scented carrot cake, is filled with homemade berry basket jam & passionfruit cream cheese icing. A double layer of vanilla-raspberry Italian meringue buttercream is applied in a textured finish with sprinkled toffee crystals. Dried raspberry powder from @essentialingredientsurryhills adds incredible flavour & fragrance. The top layer of this yoghurt-creamcheese cheesecake (based on a reliable recipe from the Simple” cookbook by @ottolenghi ) is swirled through with the popular hazelnut spread and topped with hazelnut Lindt balls dusted gold, toffee crystals, Callebaut Crispearls and voluminous meringues. 🌸Recipe for magnificent, voluminous MERINGUES🌸 Look at all the incredible ways of making the most of meringues! While you are in isolation, give this a go! 🥚🥚Ingredients
3 large egg whites
180 grams caster sugar
1.5 teaspoons cornflour *If making extra large meringues (5cm + in diameter), add 3/4 teaspoon white vinegar to stabilise the mixture. 🌸Preheat oven to 150 degrees Celsius fan forced. 🌸Separate egg whites from yolks. 🌸 Whisk the egg whites on HIGH until soft peaks form. 🌸Reduce speed to MEDIUM. Add sugar, 1 tablespoon at a time until all the sugar is incorporated. Whisk for 90 seconds between each addition. 🌸Turn off the mixer and use a spatula to scrape down the sides. Whisk again on medium speed for 2 minutes. 🌸Add cornflour and whisk on low until combined. *If using vinegar add after this step. 🌸Mixture should be stiff and gloriously glossy like satin. 🌸Spoon into a piping bag fitted with a tip of your choice. Pipe evenly sized meringues onto a baking tray lined with a silicone mat or baking paper. You may also spoon dollops onto your tray for a more rustic look. 🌸Place into the oven and immediately turn heat down to 120 degrees Celsius. 🌸Bake as follows:
Small : 30 minutes
Medium: 45 minutes
Large: 60 minutes
X-large: 75 minutes 🌸To check if meringues are ready, gently lift one off the baking sheet. It should have a thin firm shell and not crumble. 🌸Turn off the oven, leaving meringues inside with the door slightly ajar for 15-30 minutes depending on size. This allows meringues to cool slowly and crisp up completely. 🌸Essential Tips... Bowl and whisk must be clean and dry...Eggs should be at room temperature...Medium speed for whisking egg white & sugar to prevent air bubbles & cracking...Store in airtight container out of the fridge, for up to 3 days. #cabinetofcookery #csrsugar #whitewingsbaking #holbrookpaddockeggs #loyalbakeware #meringues #theessentialingredient

Thank you @mondaymorningcc for yet another brilliant recipe! ➡️Swipe for progress pics...I’ve always wanted to make an authentic Babke - sweet yeasted bread marbled with an enticing filling - I chose chocolate cinnamon 🍫. This is actually a combination of the two varieties detailed in the must buy cookbook, “Now for Something Sweet”. What better time to try a bit of bread making 😋 If you have flour give this recipe a go. There is a bit of fiddle faddling involved, but follow ALL the steps, and it is worth the effort. Tip...I wrapped 2 tea towels around my bowl of dough keeping it snug and warm & popped it at the back of my stove to rise. Secure the wrapping with masking tape then walk away for a couple of hours and let the yeast sprinkle its magic. My family polished off an entire loaf after dinner while still warm and I added a piece to my breakfast plate this morning, and was delighted by how soft and light the dough tasted, due to the addition of olive oil and farm fresh golden eggs. Corona virus disrupted the launch of this cookbook in several locations around Australia, but I’m so pleased it is available to purchase.
