When my 11 year old daughter Eva is not doing cartwheels in the backyard or turning boxes, bits and bobs into craft on the school holidays, she can be found fossicking through recipe books. I must add that Eva is also the most capable kitchen hand, making quick work of peeling apples and veggies and rolling meatball mixture into the tiniest round morsels. 

Having previously tried out a couple of published recipes for guacamole, Eva decided to come up with her own version by combining favourite ingredients that are pretty much staples in our pantry and fridge all year round. As for the clean up, well let’s just say that mashed avocado has the ability to splatter and stick across the entire bench top! 


Eva’s Oh So Easy Guacamole

2 ripe avocados
2 tablespoons sour cream – light or full fat, comes down to personal preference.  
sea salt and black pepper
1 tsp finely chopped fresh coriander leaves
1 good pinch of dried chilli flakes
Juice of 1 small lime

Slice each avocado in half and remove the large seed. Scoop out the soft flesh into a mixing bowl. 

Add the sour cream, coriander and chilli and season with the salt and pepper to taste. 

Using a potato masher, mash the ingredients to your liking. Eva wanted her guacamole to be silky smooth, but you may also like to leave a few chunky pieces as another option. 

Squeeze in the lime juice and stir to combine. 

Using a spatula, scoop out into a presentable bowl and serve with plain corn chips. This is best eaten on the day that it is made.
