My littlest one is due for his final feed very soon, so tonight’s post will have to be brief. In the spirit of the snowboarders at the Sochi Winter Olympic Games, think of it as being fast and focused!

Smooth, buttery breakfast crepes stacked up high were served alongside crispy barbecued bacon and golden eggs. My husband took care of the crepes while I fired up the BBQ. With bowls of juicy Tasmanian cherries, Canadian maple syrup and various jams, we all made the most of a Sunday breakfast feast.

I had lunch on the table today within 20 minutes. This pork and fennel sausage spaghetti with grated zucchini and parmesan was a fast and flavoursome late lunch dish. Must make this again as a mid-week meal solution.

For dinner…Lamb racks marinated in fresh mint, parsley, chilli and citrus were roasted alongside thyme and garlic baby potatoes. A light, Greek style salad made with green oak lettuce was also served alongside dollops of Greek yoghurt.

There’s always room for dessert! I picked up a couple of kilos of fragrant, crisp Pink Lady apples at the Norton Street Grocer in Leichhardt and used half of them to make this apple crumble. I actually served this up after dinner last night, which was a slow cooked veal goulash with turmeric rice.  With such sweet apples there is no need to overdo the sugar in your crumble.
