In order to avoid an afternoon of chaos and to keep my stress levels to a minimum, I prepared this evening’s dinner of lovingly layered, home cooked lasagne hours and hours ahead of time. My plentiful dish is currently in the oven, the top turning a golden brown and bubbling with an extra layer of bechamel sauce and cheese. 

Being organised with ingredients, the cooking time required and the actual preparation of meals does take some forward planning, but it is well worth the effort. Especially if you enjoy the comforting aroma and terrifically satisfying taste of home cooking, not to mention how much more economical it is than eating out all the time.

On that note, I need to dash off now to my eldest son’s piano recital before returning home and sharing this meal with him, long after the others have gone to sleep.
